  • Smoked Meat with Helsinki Hudson’s Hugh Horner

    first_imgIf there’s one thing I may love more than a meal fresh off the grill, it’s one fresh out of the smoker. It’s hard to rival a rack of ribs or a brisket that’s spent all day over low smoky coals and wood chips. I was curious how easy it is to become a smoke master in my own backyard, so I reached out to Hugh Horner, executive chef of Helsinki Hudson and a backyard smoking fiend. When it comes to a home smoker, Horner recommends the Orion Smoker. It’s inexpensive and can fit even the smallest of backyards. They’re sturdy and reliable, and Horner says, “I’ve gotten about 4 years out of each of them.  It’s a cool barrel smoker that allows you to get the full effect of smoking and it can fit on a fire escape, which I’m guilty of doing, but don’t recommend.” Because of their affordability and size, there’s no reason for anyone to shy away from a backyard smoker. The most intimidating part of being a novice smoker is figuring out how to get your smoke just right. Horner cautions against watching too many TV shows full of caricatured southern chefs equipped with huge smokers full of bells and whistles. Like anything, practice is what makes the home smoker a master. He says to start small, learn how to “properly cook a pork butt, don’t overcook chicken and get a proper smoke ring on your ribs or brisket.” Horner, a Hudson Valley resident, loves to use applewood in his smoker. But there are a ton of options available for the home smoker. Part of what makes smoking meats so fun is experimenting with different woods to experience all of the possible flavors matches. Use your judgement: it’s probably a better idea to pair lighter flavored foods like chicken with a milder wood, like apple. Save the mesquite for a hearty meat dish and remember to use it sparingly. My parents just left me with smoked trout, shrimp, and eel from Delaware Delicacies in Hancock, New York and they are outrageously good. Horner says that a good place to start when it comes to smoked meat is anything fatty. “Smoke loves fat!” he says, “It’s like nature’s gift for flavoring. Fat absorbs the smoke and allows the meat to take high heat without overcooking.”  And when it comes to Horner’s favorite smoked meat, he had to go with pork: “You can take a Carolina boy outta the south, but you can’t take the south outta him.” I asked Hugh if he could share one of his favorite recipes, and he more than happily obliged: “I’m going to give you a recipe for an Orion smoker, preferably for an NFL Sunday/Family Outing or a Tuesday night (if you’re in the industry). We do more of a southern hybrid type BBQ at Helsinki Hudson.  The Hybrid being Texas (dry rubbed) and Eastern Carolina (vinegar based sauce).  At no given point in time should this recipe be shared with people you dislike.  This one’s for the creme de la creme of your friends.”Helsinki Hudson Pulled Pork2 8 lb. bone-in pork butts – always leave that bone inDry Rub5 pounds brown sugar1.5 cups paprika1.5 cups cayenne pepper3 cups cajun spice2 cups chili powder1 cup red pepper flakes1/2 cup garlic powder1/2 cup onion powder2 cups kosher salt1 cup white pepper Don’t worry, you didn’t mess up when there’s a bunch left over, keep it sealed up tight and save it for the next ‘Cue.  Pork Butt PreparationSimply put a little bit of olive oil on the pork butt and rub it down with the dry rub.  Put your DRY chips in the bottom drip pan of the Orion smoker… DRY… I don’t care what they tell you.  Put the pork butt in the second shelf and the top shelf and seal with the lid.  The most important part is to not open up the Orion smoker to check on the butt after you start smoking.  I’ve tried and failed miserably…  So now that you have the Orion smoker in front of you, you’ll see that there’s charcoal trough on the bottom and on the top.  Looks like R2-D2 right!? The buyer of the ”M-Star” fleet comprising eight 8,500 TEU container ships is an Asian finance syndicate which intends to continue to use the ships for charter operations.Two of the eight fully containerised vessels have already been handed over to their new owners. The handover of the remaining six ships is scheduled to take place during the next weeks.The ships that make up the “M-Star” fleet entered into service between 2004 and 2007.To finance their purchase, MPC Capital had raised equity capital of around EUR 175 million (USD 197 million) predominantly among private investors.The sale that has now been agreed means the investors realise an average annual post-tax return of 6 % on their employed capital.     Rbat – Talks continue of amending a controversial European Court of Justice’s (ECJ) decision regarding Western Sahara, as Moroccan Foreign Minister Nasser Bourita met in Brussels on Monday with Federica Mogherini, the High Representative of the European Union for Foreign Affairs and Security Policy.An EU press release said that the two sides discussed the amendment of the Morocco-EU agriculture agreement, after the European Court of Justice ruled in December 2016 that is not applicable to goods from Western Sahara.The two parties have since held several talks to come to an agreement to “preserve” their partnership, as they said in February when talks kicked off. A meeting in February marked an attempt by Morocco and the EU to alleviate the tension that followed the European court’s ruling, which dealt a strong blow to the relations between the two parties.     “We are extremely concerned about repeated security incidents involving aid workers,” Maki Shinohara, a spokesperson for the UN High Commissioner for Refugees (UNHCR), told reporters in Kabul. On Saturday morning, workers from the Demining Agency for Afghanistan (DAFA), which partners with the UN Mine Action Centre, were clearing mines in Zhare Dasht when they came under attack by four assailants driving up to their work site. One DAFA driver was injured and the group’s vehicles were sprayed with bullets. “What is particularly alarming is that the assailants reportedly intended to gather and kill the demining group, but were distracted” from carrying out the task, Ms. Shinohara said. The Kandahar authorities immediately sent armed guards in ten vehicles to the scene. Two suspects were arrested, but the assailants’ vehicle reportedly drove off into the mountains. The UNHCR spokesperson noted that Zhare Dasht, which hosts some 40,000 displaced Afghans, is flanked by armed guards, but following this incident, aid workers will likely have to resort to armed escorts to and from the settlement. “We condemn with strongest possible terms such cowardly acts of attacking Afghan aid workers who are working hard to help the Afghan people,” Ms. Shinohara said. “The all-too-frequent security incidents frustrate assistance activities, but we will continue to help those in need to the best of our ability.” read more

    first_imgAfter years of back and forth, rumors, and heartbreak, a movie adaptation of the classic sci-fi novel Ender’s Game is set to be released later this year.The first official trailer dropped yesterday, and it’s chock-full of fast cuts and dialog delivered by a mildly disinterested Harrison Ford. There’s not much plot, but it looks pretty.Ender’s Game is widely considered one of the finest pieces of science fiction ever written. Originally published in 1985 by author Orson Scott Card, Ender’s Game follows the childhood of Andrew “Ender” Wiggin. At an early age Ender shows an aptitude for strategic thinking, so he is recruited to attend Battle School, where he is trained as an elite soldier. To Ender this seems like a perfect way to escape from his sadistic older brother, but Battle School is serious business.The new trailer, at least, does a good job of setting up the premise: Earth is engaged in a war with an alien race, and things aren’t going well. Old military tactics are useless against this new enemy, so Earth’s leaders turn to the young in hopes of training a new kind of military mastermind.The main concern being voiced about the trailer is the generic action vibe it gives off. The novel has garnered so much praise because of how it makes you feel about the characters — the war is almost secondary. This is just a 2-minute trailer, so perhaps some of the complicated emotional layers are still there. The trailer could even be designed to sell this as an action flick to gain more mainstream interest, thus hiding a more faithful adaptation of the book.The film will star Asa Butterfield (of Hugo) as Ender Wiggin, alongside Harrison Ford, Ben Kingsley, and Abigail Breslin. Not only does it deal with the name dispute, but it also outlines the future collaboration between the Skopje and Athens on issues such as cooperation in different fields, such as defence and education, civil protection, and settlement of disputes.Supporters of the agreement feel that it would put an end to a 28-year dispute and lead to a new era in Greek-FYROM ties. Critics, however, state that the document fails to deliver on certain points. Mais cette année, Google a décidé de prendre les devants en créant un site Android spécialement pour l’événement.On peut ainsi y voir notamment un compte à rebours qui montre les jours (et heures) qui restent avant l’ouverture de la grande messe de la téléphonie. D’ici peu, le site devrait également contenir plus d’informations au sujet du stand du géant américain et les nouveautés qu’il prépare. That’s for a good reason. Jon Bernthal’s Punisher was by far the best part of Daredevil season two. We’re still a little ways off from the show’s premiere, but Netflix revealed the poster for the Series in Entertainment Weekly ahead of Comic Con 2017. If that art looks familiar to you, that’s because it’s drawn by Marvel Chief Creative Officer Joe Quesada. The poster will be available for fans to purchase at Marvel’s booth at Comic Con in San Diego.At this point though, the poster just makes us want to see the show. The Punisher premieres on Netflix sometime this fall, following The Defenders‘ premiere on August 18.In other MCU news, a fan found an Easter egg in Spider-Man: Homecoming that implies the Avengers may have inadvertently brought a religion to New York. Specifically, the old Norse religion. The image comes from Reddit user UNITBlackArchive. That’s an understandable reaction to seeing your city saved from a supernatural threat by the Norse GOd of Thunder.It’s a cool subtle nod to the fact that average New Yorkers are still dealing with that battle in a number of different ways. I love it when the Marvel movies and TV shows do stuff like this. Even if it can get a little silly sometimes. (Like the guy selling bootleg DVDs of “the incident” on the street in Luke Cage.) I wish the MCU would do more stuff like this. The most interesting parts of the old Stan Lee comics were always how normal people reacted to the crazy superheroics going on around them. It’d be cool to see the movies lean into that aspect a little more. Everything we’ve seen from it at this point looks so cool; it’s a shame we have to wait until February to see it. Black Panther will fight a few of his classic comics villains in the movie, but one had to undergo a few changes to be acceptable in 2017.In an interview with Entertainment Weekly, Executive Producer Nate Moore spoke about updating Black Panther’s most iconic foe, Man-Ape. In the comics, Man-Ape, or M’Baku eats and bathed in the blood of white gorillas for strength. He also wears a suit that looks like the body of a white gorilla. Moore said they immediately realized dressing a black man as a gorilla and calling him “Man-Ape” is a real bad look.So first, they never call him Man-Ape in the movie. The character, played by Winston Duke, will only be known as M’Baku. His armor has been redesigned, but as his religious cult still worships the gorilla, there are recognizable elements of the animal in the armor. That’s an important distinction. It looks like a man’s armor. Not an ape costume.“Having a black character dress up as an ape, I think there’s a lot of racial implications that don’t sit well, if done wrong. But the idea that they worship the gorilla gods is interesting because it’s a movie about the Black Panther who, himself, is a sort of deity in his own right,” Moore said. Moore says that M’Baku will try to overthrow T’Challa because he disagrees with him over Wakanda’s role in the world. M’Baku believes that Wakanda should stay isolated, and thinks T’Challa’s father should never have gone to the United Nations. Just like other businesses face risks like competition, changing lifestyles and cyclical business conditions, so do films. But one risk that is distinct to films is the Censor Board of Film Certification (CBFC), which has turned more prudish of late.The Board had created a furore after cutting “short kissing scenes” between actor Daniel Craig and his leading ladies in the James Bond movie Spectre, prompting the famous “sanskari bond” comment on social media.A “bold” scene cut or a dialogue muted has the potential to impact the overall appeal of films and consequently, box office collections. Now, when such films are produced and distributed by listed companies, the hit is on investors also, unlike unlisted firms where it is only upon the promoters, their associates and lenders.Film production and distribution Super Cassettes Industries Limited, more popular as T Series and the maker of upcoming film Hate Story 3 has managed to get an “A” certificate from the CBFC, paving the way for its release on 4 December. But they had to replace the word “bhagwan” with “uparwala” when the Board felt that “bhagwan” would hurt the sentiments of a particular community. Fortunately, Super Cassettes is not a listed company.The film features Sharman Joshi, Zarine Khan, Daisy Shah and Karan Singh Grover. “We’ve received an adult (A) certification and the erotic aspect of the film has been retained. We’re happy with the censors and the audience will also be happy with the film,” said Sharman, reported IANS.The impact is unlikely to be adverse at the box office.Balaji Telefilms, a listed company that makes television serials and films, has queued up a series of films for the next six to eight months, including “Udta Punjab” and “Half Girlfriend” based on Chetan Bhagat’s novel by the same name.Should these movies face Censor Board’s hurdles for some of the scenes, their box office prospects could suffer and consequently, gullible shareholders.As it is, the company’s “Kya Kool Hai Hum 3” could not be released in October as scheduled, as it is yet to get the Censor Board’s nod.Another risk unique to films is two expected blockbusters clashing at the box office. A recent instance is that of Sanjeev Leela Bhansali’s “Bajirao Mastani” and Shah Rukh Khan’s “Dilwale”. Both the films are slated to be released on 18 December and this likely to hit their box office collections, though analysts feel that the Christmas and yearend holidays will see the movies through.Eros International Media, listed on the BSE, is the global distributor of “Bajirao Mastani” and an analyst expects the movie to earn “Rs 200 crore to Rs 300 crore on a worldwide basis.””Bajirao Mastani” features Ranveer Singh, Deepika Padukone and Priyanka. Ranveer plays the role of Bajirao and Deepika of Mastani, while Priyanka appears as Bajirao’s first wife Kashibai.Directed by Rohit Shetty, “Dilwale” stars Shah Rukh Khan, Kajol, Varun Dhawan and Kriti Sanon.The Eros stock closed at Rs 239.80, a gain of 4.99% on Wednesday on the BSE, though far lower from its price of Rs 416 six months ago, on 2 June.Balaji Telefilms ended the day with a loss of 3.97% to close at Rs 137.60. LeBatard implied that Magic keeps getting gigs because of his charm and charisma, despite failing as a coach, talk show host, and what he characterized as a lackluster tenure on as an NBA TV analyst.Fellow ESPN’er Keyshawn Johnson thought the comments were racist, and PTI host Michael Wilbon sent a series of Tweets criticizing LeBatard for conveniently ignoring Johnson’s post-basketball business success.Today in The Herd, Colin didn’t defend LeBatard’s comments, but said it’s fair to question any GM entering a professional sports job with no prior front office experience.
